He bought a bunch of crypto during the marriage with our joint savings. He says it's worth almost nothing now. How does the court value something this volatile?

Court can pick a valuation date — usually date of separation or date of trial. For volatile assets, sometimes both sides agree to split the actual coins in kind so both share the risk equally.
